Working in the cellar


At the end of the summer, the vineyard become the kingdom of the grape pickers. The harvest is entirely manual, as everywhere else in Champagne. Then comes the time of working in the cellar….

The vinification must allow the quality of the grapes that come down from our hillsides to be fully expressed. In my opinion, it is an art that must remain discreet.

Our wines, aged and aged in our cellar, are a reflection of the excellence of our chardonnays, which have matured for a long time on the steep slopes of our hill.
